Sometimes the best recipe ideas come from a dessert you can’t stop thinking about. This week’s inspiration came from Rigsby’s in Spartanburg, where a warm salted caramel brownie served à la mode is the kind of indulgence worth saving room for.
Their Brownie à la Mode features a warm salted caramel brownie topped with hand-dipped vanilla ice cream, whipped cream and generous drizzles of chocolate and caramel sauce. It’s simple, delicious and proof that you really can’t go wrong with a good brownie and a few extra toppings.
With Halloween just around the corner, I started thinking about how to give that same chocolatey goodness a fun, seasonal twist. The result? A pumpkin patch brownie pizza that’s part dessert, part decorating activity and completely customizable.
Despite the name, there’s no pumpkin in the brownie itself. Instead, the pumpkin patch comes from the decorations, making this a great option for kids who love Halloween but aren’t necessarily fans of pumpkin-flavored desserts.
Even better, this recipe can easily transition from Halloween to Thanksgiving, football tailgates or just a cozy fall weekend.
Pumpkin Patch Brownie Pizza
Servings: 10-12
Prep time: 20 minutes
Bake time: 25-30 minutes, plus cooling
Ingredients
For the brownie base:
• 1 box (18-19 ounces) brownie mix
• Eggs, oil and water called for on the box
• ½ cup semisweet chocolate chips (optional)
For the frosting:
• 8 ounces cream cheese, softened
• ½ cup unsalted butter, softened
• 2 cups powdered sugar
• 1 teaspoon vanilla extract
• Orange gel food coloring (optional)
For decorating:
• 8-10 chocolate sandwich cookies, crushed
• Candy pumpkins
• Green decorating icing
• Fall or Halloween sprinkles
• Chocolate and caramel sauces, for drizzling
Directions
1. Preheat oven to 350 F, or the temperature specified on your brownie mix. Grease a 12-inch round pizza pan with a raised edge or line it with parchment paper.
2. Prepare brownie batter according to package directions, stirring in chocolate chips if desired. Spread evenly into the prepared pan.
3. Bake for approximately 25-30 minutes, checking early and adjusting according to your brownie mix and pan. The edges should be set, and a toothpick inserted near the center should come out with moist crumbs, not wet batter. Allow to cool completely.
4. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, mixing until fluffy. For the pumpkin patch version, tint the frosting a soft orange.
5. Spread frosting over the cooled brownie, leaving a small border around the edge to resemble pizza crust.
6. Sprinkle crushed chocolate cookies over the frosting to create edible dirt. Arrange candy pumpkins throughout the patch, adding green icing vines and a few festive sprinkles.
7. Cut into pizza-style wedges and serve. For an extra-indulgent version inspired by Rigsby’s, drizzle individual slices with chocolate and caramel sauce or add a scoop of vanilla ice cream.
Make It Your Own
One of the best things about this dessert is how easily it adapts to the occasion.
For Halloween, stick with the pumpkin patch theme and let the kids arrange candy pumpkins, create icing vines and add their favorite spooky decorations.
For Thanksgiving, skip the Halloween sprinkles and decorate with candy pumpkins, chopped pecans and a light caramel drizzle. The warm fall colors make it a fun addition to the dessert table without requiring another traditional pie.
For tailgates, use your team’s colors in the frosting or sprinkles, or keep things simple with chocolate chips, crushed cookies and caramel.
And if you’d rather make a classic brownie pizza, leave the frosting white and top it with mini chocolate chips, crushed candy bars, chopped peanut butter cups or fresh strawberries.
You can even set up a little brownie pizza decorating station and let everyone customize their own slice.
Whether you’re hosting a Halloween party, gathering around the television for college football or planning Thanksgiving dessert, this is one of those recipes that’s easy to make, fun to share and guaranteed to bring a little extra sweetness to the table.
