Cook’s Corner: A Palm Sunday Tradition, Made Simple

There’s something about the Sunday before Easter that feels like a quiet exhale. The calendars are still full, the to-do lists are long, but Palm Sunday has a way of gently pulling us back to what matters- gathering, slowing down, and sharing something simple with the people around us.

Whether you grew up attending church, meeting family for lunch, or just marking the start of spring in your own way, Palm Sunday is one of those traditions that doesn’t need to be complicated to feel meaningful. Sometimes, all it takes is a table, a few familiar faces, and something warm from the oven.

This week, we’re leaning into that idea with a recipe that feels a little elevated but is surprisingly easy to pull together: sweet and savory palmiers. Made with store-bought puff pastry, these come together quickly but look and taste like something you spent hours on. They’re perfect for a post-service brunch, a front porch gathering, or even just a quiet afternoon snack.

The best part? You can make both versions at once- something savory to balance something sweet- because Palm Sunday, like most good traditions, is about a little bit of everything.

 

Spinach Artichoke Palmiers (Savory)

Ingredients:

• 1 sheet frozen puff pastry, thawed

• ½ cup chopped spinach (thawed and squeezed dry)

• ½ cup chopped artichoke hearts

• ¼ cup cream cheese, softened

• ¼ cup grated parmesan

• 1 garlic clove, minced

• Salt and pepper to taste

Instructions:

1. Preheat oven to 400°F and line a baking sheet with parchment paper.

2. In a bowl, mix spinach, artichokes, cream cheese, parmesan, garlic, salt, and pepper.

3. Roll out puff pastry into a rectangle. Spread mixture evenly across the surface.

4. Roll each long side inward toward the center until they meet.

5. Slice into ½-inch pieces and place on the baking sheet.

6. Bake for 12–15 minutes, or until golden and crisp.

 

Honey Citrus Sugar Palmiers (Sweet)

Ingredients:

• 1 sheet frozen puff pastry, thawed

• ¼ cup sugar

• 1 tablespoon honey

• Zest of 1 orange

• Zest of 1 lemon

• ½ teaspoon cinnamon

Instructions:

1. Preheat oven to 400°F and line a baking sheet with parchment paper.

2. Mix sugar, citrus zest, and cinnamon in a small bowl.

3. Roll out puff pastry and lightly brush with honey.

4. Sprinkle

 sugar mixture evenly over the pastry, pressing it in gently.

5. Roll each side inward to meet in the center, then slice into ½-inch pieces.

6. Place on baking sheet and bake for 12–15 minutes until caramelized and golden.

There’s no right or wrong way to spend Palm Sunday, but there is something special about making space for it- whether that’s around a table, in a pew, or simply in a quiet moment at home.

Maybe this is the year you invite a neighbor over. Maybe it’s a last-minute brunch with friends after church. Or maybe it’s just you, your family, and a plate of something warm and homemade.
