Cold subs, warm days & one very versatile Italian grinder

There is just something about a cold sub sandwich this time of year.
Maybe it’s the fact that nobody wants to stand over a hot stove in May while juggling baseball games, dance recitals, teacher gifts, graduation parties and every other end-of-school event packed onto the calendar. Or maybe it’s simply that a good Italian grinder somehow works for everything- lunch on the go, pool days, easy dinners, party trays and late-night fridge raids alike.
This week’s Cook’s Corner is all about the Italian grinder trend that seems to be everywhere right now, and honestly, it deserves the hype. Crisp lettuce, deli meats, creamy dressing, crunchy bread and tangy peppers are hard to beat on a warm Carolina afternoon.
The best part? One simple recipe can turn into three completely different meals depending on how you serve it.
And if making your own feels like one more thing on an already overloaded May to-do list, Spartanburg has plenty of local spots ready to handle it for you. Option 1: The Classic Italian Grinder
Perfect for beach trips, ballfields or quick dinners.
Ingredients
• 1 large loaf French bread or sub rolls
• 1/2 pound sliced turkey
• 1/2 pound ham
• 1/4 pound salami
• Provolone cheese slices
• Shredded lettuce
• Sliced tomatoes
• Banana peppers
• Red onion slices

Grinder Dressing
• 1/2 cup mayonnaise
• 1 tablespoon red wine vinegar
• 1 teaspoon Italian seasoning
• 1/2 teaspoon garlic powder
• Cracked black pepper

Slice the bread, layer meats and cheese, then top with lettuce, tomatoes and peppers. Mix dressing separately and drizzle generously before wrapping tightly in parchment paper for easy grab-and-go meals.

Option 2: Party Grinder Sliders
This version is ideal for graduation parties, showers or feeding a crowd.
Instead of large sandwiches, use Hawaiian rolls or slider buns. Build the sandwiches the same way, then slice them into small individual portions and arrange on a tray. Add toothpicks and serve chilled.
For an extra touch, lightly brush the tops with olive oil and sprinkle with Italian seasoning before serving.

Option 3: Hot Italian Grinder Dip
Somewhere between a dip and a full meal and maybe the best option of all.

Ingredients
• 8 ounces cream cheese, softened
• 1 cup shredded mozzarella
• 1/2 cup chopped salami
• 1/2 cup chopped ham
• 1/2 cup chopped pepperoni
• 1/4 cup banana peppers
• 1 tablespoon Italian seasoning
Mix everything together and bake at 375 degrees for about 20 minutes until hot and bubbly. Top with shredded lettuce and diced tomatoes after baking for the full grinder effect. Serve with toasted baguette slices, pita chips or crackers.
Cold sandwiches may not be revolutionary, but sometimes the best spring and summer meals are the simplest ones — easy to carry, easy to share and easy to make memories around.
